Kutia

Is a famous Christmas cuisine of Poland. It is a sweet grain pudding, traditionally served in Polish, Ukrainian and Lithuanian cultures. Being an integral component of traditional Polish Christmas dinners, it is rarely served at other times of the year. Poppy seeds are simmered in hot water until they can be crushed between the fingertips. They should be ground three times in a food processor or a meat grinder. Traditionally, the poppy seeds were crushed in a mortar and pestle made specifically for this purpose. Strain out the water from the poppy seeds and from the wheat and allow them to cool. Mix the cooled poppy seeds and wheat, then add some liquid honey (you may add a little hot water to dissolve it) or dissolved sugar and some or all of: nuts, raisins, almonds, pieces of oranges.

Pickled Herring - Sledzie Marynowane-

Includes salt herrings, large chopped shallots, peppercorns and whole allspice. Soak herrings in cold water for at least 24 hours changing it every 8 hours or more. Remove the milt, skin, bones and cut each herring into pieces. Arrange onions and herring in layers in a jar and pour boiled vinegar mixed with sugar. Keep in cool place overnight. Carp in Aspic - Karp w Galarecie comprises carp, vegetable stock, bay leaves, peppercorns, gelatin, water and egg white. Clean fish. Remove head and clean it. Cook head and spices in vegetable stock for half hour and strain. Place whole fish in a pan. Cover with strained stock and simmer for half hour until tender. Remove fish and place on a serving platter. Dissolve gelatin in water, add stock. Garnish with carrot rings, hard boiled eggs, and lemon slices.
