Mexican Christmas Recipes

In Mexico, the American version of the typical Christmas Eve is conspicuous by its absence but that doesn't mean that they don't celebrate Christmas. Just like in other western countries, Christmas is celebrated with much glee and merriment and it constitutes one of the most auspicious and long awaited events of the year.

But they have retained a different and unique style of their own and Christmas in the real sense of the term starts on the 16th of December with the initiation of the Christmas celebration popularly known as the "La Posadas," which can be likened to our Christmas Eve.

It is probably the most delightful and unique of Mexican traditions and is primarily celebrated to commemorate the events in the journey of Mary and Joseph from Nazareth to Bethlehem. It entails enacting of the story of Christmas by children which generally comes to a head with the "Pinata" where a bag full of Christmas candies are hung up on the roof or the tree and one by one the children are asked to try to break the bag or the clay earthen pot. Whoever breaks it is declared the winner and the cookies are distributed among all the children present. The Chocolate Atole

Ingredients

6 cups whole milk 1-cup masa harina--corn flour 2 cups water 1-cup brown sugar, firmly packed 3 oz. unsweetened chocolate, grated 1 cinnamon stick

Procedure

Heat milk and chocolate and stir till chocolate is dissolved. Remove from heat and set aside to keep warm. Mix the masa harina with water in another container and add cinnamon stick to it. Place over low heat and let it cook until the mixture has thickened and the masa becomes translucent. Add the chocolate milk and sugar to it and simmer for a few minutes after dissolving the sugar. Remember to remove the cinnamon stick before serving.
