Apple Relish is a delicacy that spawns the sin of greed wherever you are. Take large red apples, green Granny Smith apples, dill pickles (different from the Kosher style), Vidalia or sweet type shallots, granulated sugar, Apple cider vinegar or red wine vinegar in estimated quantities.
Wash and core apples, but do not peel. Place in grinder or food processor together with pickles and onion, and coarsely grind. Add sugar and vinegar; chill thoroughly. Serve with pork or poultry. Make Polish pickles with drained dill pickle spears, cream cheese in room temperature, cream cheese and thin-sliced beef luncheon meat as ingredients. Dry the excess moisture off pickles. Spread cream cheese on two slices of lunchmeat. Wrap meat around a pickle. Repeat with the remaining ingredients. Chill and slice into rounds.
You can also make pickles with diced pineapple, maraschino cherries (whole red and green), quartered figs, vinegar, water, gherkin whole pickles, cinnamon, seedless raisins, granulated sugar and whole cloves. Boil vinegar, sugar, water, cloves and cinnamon for about 10 minutes and combine with fruit. Let stand for several days before serving. Keep refrigerated. For Ice Water Pickles, wash the cucumbers, quarter them lengthwise, and soak them in ice-water. Peel and slice onions and pack them in the bottoms of 5 pint jars. Pack the cucumbers lengthwise in the jars. Combine the mustard seed, vinegar, sugar and salt, bring to a boil. Fill the jars to overflowing with the boiling-hot syrup and seal.
