Peppermint Candy Cookies

Peppermint Candy cookie requires no introduction. We are all familiar with the sights and sounds of Peppermint Candy cookie as they are one of the most popular showers during Christmas . Many of us in our childhood would have loved to own a Peppermint Candy cookie factory but very few of us would really like the very prospect of having to prepare loads of them once we become adults.

This reluctance primarily stems from the wrong conceptions and notions we harbor about the preparation procedures. Peppermint Candy cookie are not extremely easy to prepare but neither are they a near impossible feat. If one fails, one is at liberty to rush to the nearby store to grab a few of them but there is no harm trying to make them at home either. Here we are providing you with a simple recipe for preparation of Peppermint Candy cookie. Ingredients are divided into 2 parts, ones required for the dough and ones for the filling.

Ingredients for the dough:

1-cup (2 sticks) sweet butter 2-cup 10X (confectioners') sugar 2 1/2 cups all-purpose flour 1/2 cup chopped nuts l teaspoon vanilla

Procedure to prepare dough: -

Cream butter with sugar and slowly add flour, nuts and vanilla to it. Mix thoroughly and let it cool. Chill it.

Ingredients for Filling:

1/2 cup crushed peppermint candy 1/2 cup 10X (confectioners) sugar 2 tablespoons cream cheese 1 teaspoon milk 1 drop red food coloring

Procedure to prepare filling: -

Combine the candy with the sugar. Keep aside 1/4 for topping cookies. Blend cream cheese and milk well and add this mixture to the remaining candy mixture. Add the food coloring to it and mix thoroughly. Take out the dough from the refrigerator and shape them into balls that are about 1 inch in diameter. Make a hole by pressing your finger at the center of each ball and fill it up with 1/4 teaspoon filling. Seal it with a small bit of dough. Place them on the ungreased cookie sheet and bake in a preheated 350oF oven for a maximum of 12 minutes. Don't let them brown. Let it cool on wire racks. Sprinkle the warm cookies with the remaining candy mixture and let it cool. This arrangement yields 40 cookies.
