Christmas Eve Recipes





Christmas Eve is a very special time for every one. Traditionally many countries celebrate Christmas Eve on a much grander scale than 25th December, that is, Christmas Day. Christmas Eve recipes also are very popular and painstakingly made to honor the birth of Baby Jesus.
Christmas Eve recipes vary from region to region. Here are some simple Christmas Eve recipes for you to make at home. Families gather to have the most sumptuous Christmas dinner on Christmas Eve and the meal is always a joyous and hearty one. Various types of baked, roasted and boiled goodies are put on the table and surprisingly do not take much time to disappear.

Now for the Christmas Eve recipes:

  • Barszcz

    Materials:

    12 medium beets
    1 qt. water
    1T sugar
    salt and pepper
    1 onion sliced
    juice of 1 lemon
    2 cups vegetable bouillon
    1/2 cup sour cream

    Method:

    Wash and peel beets and cook them with onions in water until beets are tender. Add lemon juice, sugar, salt and pepper. Leave overnight. Strain and add bouillon. Heat and add sour cream.

  • Carp in Aspic Materials:

    3 lbs. carp
    4 cups vegetable stock
    4 peppercorns
    3 bay leaves
    1 T gelatin
    2 T water
    1 egg white

    Clean fish and the head thoroughly. Cook head and spices in vegetable stock for half hour and strain. Now place whole fish in a pan and cover with strained stock and simmer for half hour until tender. Place the fish on serving platter. Clarify the stock by adding slightly beaten egg white. Stir continuously and bring it to a boiling point. Strain through napkin twice. Dissolve gelatin in water, add stock. Pour over the cooled fish. Garnish with carrot rings, hard boiled eggs, and lemon slices.
