Vegetarian Christmas Recipes





Get along, all you connoisseurs of taste and its finesse, with a dash of greenery to adorn your platter this Hanukkah with Christmas Carnivals Vegetarian Christmas Recipes. Vegetarian cuisine blends the ethics of cookery with a certain amount of health standards.

In the West, the term vegetarian has come to mean a kind of food which excludes ingredients for which
an animal must have died, such as meat, meat broth, cheeses that use animal skin and tissue and for the strictest, even some sugars that are whitened with cane sugar.

Broccoli Cream Cheese and Pear and Almond Soup is made with head of broccoli, large onion, white parts of leek, chopped, butter, vegetable stock, low fat soft cheese, fine oatmeal, ripe pears, toasted, flaked almonds, milk, salt and freshly ground black pepper.

Dapper the broccoli into tiny florets, chop the stalk parts in small pieces. In a large saucepan, melt the butter and add the chopped leeks, onion and broccoli stalks (leave aside the florets for later). Stir well and leave to sweat for ten minutes. Then add chopped pears. Stir in the oatmeal, almonds and milk a little at a time, stirring well after each addition. When the milk is stirred in, add the stock and seasoning. Beat well and simmer gently for ten minutes. While the soup is cooling, steam the broccoli florets for about 5 minutes. Pour the soup and place the soft cheese into a food processor, and blend until smooth. Return the soup to a rinsed out pan, add the broccoli florets and re-heat gently, adjusting the seasoning. Serve with crusty French bread.
