Most of the Italians fast on Christmas Eve. The fast begins from sunset on December 23rd to sunset on December 24th.
The Christmas eve fast ends only when canons are fired at the Castle St. Angelo in Rome. A festive Christmas log is kindled and prayers are offered around the presepio and a feast begins before midnight mass to break the fast. Italian Christmas Eve recipes are endless. Fish is considered as an essential part of Italian Christmas Eve recipes. In some households fish is prepared in seven different ways to represent the seven different sacraments. The Italian Christmas Eve recipes generally begin by having appetizers like salads.
Mozzarella and Tomato Salad:
Ingredients:
- 4 large tomatoes
- 4 tablespoons olive oil
- Ground black pepper to taste
- 10 ounces mozzarella cheese, thickly sliced
- 8 leaves fresh basil, torn into strips.
Directions:
Chop tomatoes in half, then slice finely; arrange on four plates. Trickle a tablespoon of olive oil over each serving, and sprinkle with black pepper. Lay slices of cheese over tomatoes, and strips of basil over cheese. Cover with plastic wrap, and refrigerate for 30 minutes before serving.

Italian Tacos:
Ingredients:
- 1/2 pound Italian sausage
- 1 pound ground beef
- 1 (16 ounce) jar tomato pasta sauce
- 1 teaspoon sugar
- 16 taco shells, heated
- 3 cups shredded mozzarella cheese
- 1 tablespoon dried Italian seasoning.
Directions:
- Combine the ground beef and Italian sausage in a large heavy skillet. Cook over medium heat until evenly browned. Drain off excess grease, and season meat with Italian seasoning.
- Heat the pasta sauce in a saucepan over medium heat until heated through. When the sauce is warm, stir in the sugar.
- Fill taco shells with the meat mixture, spoon pasta sauce over, and top with mozzarella cheese.
