Check in with Amaretti from Italy. The name is a clear derivative of amaretta, a sweet liqueur made from a blend of almonds or kernels.
Amaretto serves a variety of culinary uses. It may be served by itself, with ice - on the rocks, that is - or with other beverages, alcoholic or non-alcoholic, to create mixed drinks. Add salt to egg whites and beat until frothy. Add sugar gradually, beating until the mixture is stiff, not dry. Add almonds and almond extract and fold in gently. Drop almond mixture on buttered and floured baking sheet by the teaspoon, shape into small mounds, leaving room between each mound. Let it stand 2 hours. Bake the stuff at 190 degrees Celsius for some time or until they are delicately brown in color. Christmas Candied Cranberries are dressed with firm, red cranberries. Prick them twice with needle. Boil sugar in water until it spins a thread. Put in the cranberries and cook gently until the syrup jellies when tasted from the tip of a spoon. Remove berries one at a time and place on wax paper. Let stand until dry. Dip the berries in granulated sugar. They are decorative and can serve as an excellent garnish.
