Lemon Sugar Cookies
Ingredients:
3 cups all-purpose flour
2 teaspoons of baking powder
1/2 teaspoon of salt
2 cups of granulated sugar
I cup of solid vegetable shortening
- 2 eggs
- 1/4 cup of fresh lemon juice
- Additional granulated sugar
Procedure:
- Preheat oven to 350 F and grease baking sheets.
- Stir together flour, baking powder and salt. Set aside.
- In large mixer bowl, beat sugar and shortening until fluffy.
- Stir in dry ingredients, then lemon juice.
- Mix well.
- Drop onto prepared baking sheets, 2" apart.
- Sprinkle with additional sugar.
- Bake 8-10 minutes or until it gets a light brown in color.
- Quebec Maple Date Cookies
Ingredients:
- 3 cups of whole-wheat flour
- 1-teaspoon of baking powder
- 1-teaspoon of baking soda
- 1 cup of chopped pecans
- 1 cup of butter, softened
- 1 1/2 cups of maple syrup
- 1 teaspoon of baking soda
- 1 cup of chopped date
- 3 eggs
Procedure:
- Preheat the oven to 350 F.
- Stir together the flour, baking powder and baking soda.
- Add nuts and dates and mix well.
- Cream the butter and gradually add maple syrup and eggs.
- Gradually add the flour mixture until well incorporated.
- Drop by teaspoons on a cookie sheet and bake for 10 minutes.
