Cranberry Cookies – This picture of a dish full of chocolate colored cranberry cookies cannot help the tongue to water. The coffee granules enhance the flavor of the chocolate. Heat oven to 350°F. Grease two baking sheets. Mix together flour, butter, cocoa powder, ground cinnamon and baking soda, and set aside. Add eggs, one at a time. In a small cup, mix together the vanilla and the coffee. Stir in white chocolate chips and dried cranberries. Drop 1 tablespoon of dough at a time onto baking sheets, spacing cookies about 2 inches apart. Bake for 8 to 10 minutes or until firm. Let cool completely.
Cream Cheese Cookies – These are beautiful Christmas Cookies in the shapes of ball, crescent and others. Combine flour and baking powder in bowl and set aside. In a large bowl, cream butter and cream cheese. Add the sugar and beat until fluffy. Add egg, vanilla, and almond extract. Beat well. Divide dough into three balls. Refrigerate overnight.
Ginger Bread Men Recipes – These are multiple tiny Christmas cookies in the shapes of men. In a bowl, mix together the dry butterscotch pudding mix, butter, and brown sugar until smooth. Cover, and chill dough until firm, about 1 hour. Preheat the oven to 350 degrees and grease baking sheets. Roll dough out to about 1/8-inch thickness, and cut into man shapes using a cookie cutter. Bake for 10 to 12 minutes in the preheated oven, until cookies are golden at the edges. Cool on wire racks.
