One important distinctive feature of Trinidad and Tobago Christmas celebration is the Parang. Parangs are local Spanish carols, which are sung by small groups of carolers who visit different homes in the wee hours of the morning. These groups are known as Paranderos. The musical instruments used by them normally consist of cuatro, bass box, mandolin, flutes, guitar and other instruments. The rhythms of the songs are infectious and sometimes many people singing along join these caroling groups.
Christmas in Trinidad and Tobago is a time for universal feasting. The special Christmas season is famous for the baked food in this Caribbean country. The reputed black rum cake is one such festive specialty. This is a dark fruitcake which is soaked in powerful Caribbean rum. The fruits are used in abundance and there are different baked and curried delicacies. The traditional Christmas dinner has generous helpings of ham, turkey, pastelles, fruit cake, sweet breads, and other selected delicacies, along with conventional drinks such as sorrel, ginger beer, and ponche de crème.
